Pizza Chili (hidden liver!)

This is the first recipe I’ve made where I’ve successfully incorporated liver without being able to taste it! This Pizza Chilirecipe is based on Food Renegade’s recipe, and the picture to the right is from her post because I forgot to take a picture (Again. Whoops.). I wasn’t actually planning to post this recipe, but my dad tried it and was gushing about how amazing it was, and he told me to put it on here. So here it is! This is a low-FODMAP recipe, and is delicious as is, but if you can tolerate FODMAPs I would add some onion and garlic. I added gelatin to this recipe as well, but you can leave it out if you want. It’s just to add extra nutrition! And don’t be alarmed by the long list of ingredients; it’s all just spices, and it’s actually a really easy recipe (:

Ingredients

  • 2.5 lb ground beef
  • .5 lb liver
  • fat to cook veggies (I used bacon grease)
  • 2 bell peppers (I used one red, one orange)
  • 28oz can fire roasted tomatoes
  • 2 small cans black olives
  • 1 tin anchovies
  • 1 tbsp mustard powder
  • 2 tsp black pepper
  • 2 tbsp basil
  • 2 tbsp oregano
  • 1 tbsp smoked paprika
  • 2 tsp fennel
  • 2 tsp salt
  • 2 tsp coconut sugar (leave this out to make Whole30 compliant)
  • 1 tsp tarragon
  • 1 tsp parsley
  • homemade broth
  • garlic-infused olive oil (you can use regular olive oil if you don’t have garlic infused)
  • balsamic vinegar

Directions

  1. Put the liver in a food processor with some of your ground beef and the anchovy fillets and grind it up.
  2. Chop your peppers, and in a large pot over medium heat, sauté in fat of choice until lightly browned and softened.
  3. Add your liver/anchovy mixture, as well as the rest of the ground beef. Chop up and stir until the meat is browned.
  4. Add the tomatoes, olives, and seasonings. Add enough broth to reach the consistency you want.
  5. Add a generous splash of both balsamic vinegar and garlic-infused olive oil.
  6. Add gelatin, if using, and simmer for at least 30 minutes to let the flavors meld.
  7. Enjoy!

Modifications

You can add any pizza toppings you want to this chili! Italian sausage or pepperoni would be delicious, and you could also add banana peppers, mushrooms, bacon, or even pineapple.
