Low-FODMAP Paleo: Day 8 (I ate marrow!)

I just ate marrow for the first time! I used this recipe for marrow-infused pumpkin custard. Not really low FODMAP because of the coconut milk and the sweetener, but I discovered the recipe a couple weeks ago and really wanted to try it. I already had beef bones for making stock and I didn’t want to waste the marrow, and I figured the benefits of a superfood like marrow would definitely outweigh whatever the FODMAPs will do to me (probably nothing).

I really didn’t know what to expect with the bone marrow, because although I’ve made a lot of bone broth, I’ve never taken the marrow out of the bones. It was much fattier than I expected; I had pictured it being meatier and browner. And the weirdest thing was that it smelled good! Not beefy or anything; almost creamy and sweet. I was not expecting that at all, but it made me feel better about putting it in a custard!

The custard was pretty good, although I’ve never been much of a custard person. I cooked it all in a glass pyrex dish, and the middle was still not set after over 45 minutes, but I was too impatient to leave it in there longer so I took it out. And the middle turned out to be my favorite part! Creamier and more pudding-y than the rest. If I make it again, maybe I’ll just try to make a pudding out of it on the stove or something. I was going to take a picture of it for you, but it was ugly so I didn’t. Today I also ate a lot of bacon, some spanish mackerel, and some flounder. My new hypothesis is that carbs in ANY form, not just FODMAPs, cause me problems. Today’s nearly all-meat-and-fat diet certainly seems to support that theory, because my digestion was significantly better today than it’s been in a while. But what am I supposed to do with that information?? I can’t just go on a no-carb diet! As much as I support the idea of low-carb diets, I think a no-carb diet would just be too stressful for my body at this stage. I guess it’s still good information to have, though, and maybe it will help me come up with a solution.

    Yeah, I also think going no-carb is hard to do because they do sneak up in somethings that you may not be aware of. I do eat very low-carb tho and it works great for me, no more heart burn, I can go for many hours w/o feeling hungry so snacking has been eliminated….
    I never tried bone marrow but would love to, I have started adding organ meat to my diet, my cat loves liver, so should I 🙂

    • I’m glad VLC works for you! It worked great for me at first, but I think I’m at a point now where my body needs some extra carbs. Unfortunately I still don’t digest them well, but when I eat them I sleep better. Given that trade-off though, I think I’ll take the sleep!

      You should definitely try marrow! It’s way different from what I expected. Haha my cats love liver as well, and I wish I shared their enthusiasm! Getting myself to like liver is definitely a process 🙂

      • Having a banana or a tspn of honey before going to bed help me sleep.
        I hated liver growing up, now I can tolerate it, tastes better cooking in butter, knowing it’s full of nutrients helps too.
